Feta Spinach Stuffed Garlic Bread

A casual family entertaining appetizer for a late afternoon or evening get-together with friends. Two variations to appeal to both kids and adults. Serve one for the kids and the other for the adults.

Preheat oven to 350°F and place the four halves of the Garlic bread, cut side down on a parchment-lined baking sheet. Bake for 3 minutes. Remove from oven and let cool for 5 minutes.

Transfer the loaves to a cutting board, and using the back of a 1/4 cup dry measuring cup or large serving spoon, gently press down on the four soft interiors of the garlic bread halves. Gently compress the interior to create a crispy garlic bread shell and space for filling.

Mix cream cheese, mayonnaise, sour cream, cheddar cheese, feta, sausage, onion and garlic powders, pepper and corn all together in a large bowl.

Place one bottom half of the garlic loaf on the parchment-lined baking sheet.

Divide the filling mixture in half. Spoon half of it into the garlic loaf bottom half. Press the filling into the garlic bread and allow it to mound in the centre. Place the top half of the loaf on top and press down gently.

Coarsely chop the spinach, and add it to the remaining filling mixture. Stir in the green onion, red onion, and chili flakes if using.

Place the remaining garlic loaf bottom half on the parchment-lined baking sheet. Press the filling into the garlic bread and allow it to mound in the centre. Place the top half of the top and press down gently.

Wrap each one in aluminum foil and bake at 350°F for 20 min on the parchment-lined baking sheet.

Let cool for 5-10 min, remove from foil and cut into 1” pieces. Transfer to a serving platter and serve immediately. Serve with pickled onions, gherkin pickles, cherry tomatoes, vegetable chips, or mini sweet peppers.

Tips:

Filling can be made ahead of time and kept in an airtight container. Fill the garlic breads just before serving.

Garlic breads can also be cut into quarters and served as a warmed sandwich for dinner along side a salad or crudité.
