This comforting creamy tomato soup is super easy to make from scratch and only requires a few pantry staple ingredients. The best part is dunking our Three Cheese Texas Toast into the soup. This is perfect for busy families.
Total Time: 45 minutes
Melt butter on medium heat in a large saucepan or Dutch oven.
Add the onion, salt, and pepper and stir occasionally. Cook until the onions turn translucent, around 7-8 minutes.
Add the garlic, tomatoes (with their juices), and broth of your choice to the pot. Turn the heat up to medium-high and bring to a boil.
Reduce heat and let it simmer partially covered for 30 minutes, stirring occasionally.
Use an immersion blender to blend the soup to your desired consistency.
Pour into bowls and garnish with a few basil leaves.
