Craving something crispy and delicious? A schnitzel mushroom cheese melt on Garlic Texas Toast adds the perfect crunch to every bite. This sandwich always hits the spot!
The German word schnitzel literally means ‘slice’. In English, schnitzel refers to all types of flat, breaded, and fried pieces of meat. Simply put: a schnitzel is a cutlet (a thin slice of boneless light meat, albeit veal, pork, chicken, turkey) that’s coated in breadcrumbs and fried. For a quicker version, skip step 1 and 2, just use store bought schnitzel and tomato sauce.
Tenderize cutlets with a meat mallet.
In three separate shallow bowls:
Bowl 1: Place flour and season with salt and pepper
Bowl 2: Beat eggs
Bowl 3: Place breadcrumbs
Place each cutlet into the first bowl and coat with flour. Dip cutlet into egg mixture and coat completely. Finally roll and pat cutlet in the breadcrumbs.
Fry cutlet on stove top or bake in oven:
Stove top: Heat oil in a frying pan over medium-high heat. Cook each cutlet for 3 to 4 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel to drain.
Oven: Bake the schnitzels for 15 – 20 minutes at 350°F / 180°C.
In a large skillet on medium-high heat, fry up onions and garlic in olive oil until soft.
Add tomatoes, basil, and oregano.
Rinse the can with 1/2 cup of water and add the liquid to mixture.
Bring to a boil.
Simmer for 20 – 30 minutes.
Prepare Furlani Garlic Texas Toast as per packaging directions.
Once bread is toasted, spread a generous dollop of tomato sauce over one side of toast.
Place cutlet on top. Layer with sliced mushrooms and drizzle with Parmesan cheese.
Place the sandwich into hot oven for a couple of minutes – watching the cheese melt – take it out once it’s to your liking.
Enjoy!
