We’ve got your back-to-school lunches covered with our quick and easy tuna melt sandwich. This isn’t your basic tuna sandwich; it’s packed with flavour and takes under 20 minutes to make!

Preheat oven to 425°F. Drain the tuna and break up into smaller chunks.
In a large bowl, add the tuna, mayonnaise, corn, celery, red onion, pickles, parsley, mozzarella cheese, and lemon juice. Season with salt and pepper to taste and mix all ingredients until well combined.
On a baking sheet, lay out 6 slices of Furlani garlic Texas toast. Top each slice with 1/6 of the tuna mixture, 1 slice of each cheddar and Havarti cheese, and 2 tomato slices. Add the remaining 6 slices of toast on top to complete the sandwich. Bake for 8 minutes or until cheese is melted. Dig in!
