Easy Breakfast Sandwich Recipe

This easy Breakfast Sandwich recipe uses one pan to make the ultimate breakfast sandwich! With scrambled eggs, ham, cheese and Garlic Texas Toast, it’s hearty and full of flavour.

In a small skillet (about 6-8″ wide), cook Garlic Toast slices over medium heat just until golden on one side. Remove.

Spray the skillet with non-stick.

Whisk together the eggs, cream, salt, parsley and pepper and pour into the skillet. Let cook for a couple of minutss (not all the way!), lifting the edges to allow the uncooked egg to run underneath.

When the eggs are about half cooked, place both Texas Toast slices, browned side down, onto the eggs (we want the eggs uncooked so they adhere right to the toast!).

Continue cooking until eggs are mostly set, lifting and allowing uncooked portions to run under.

Flip the egg and toast so that the uncooked side of the toast is down on the pan.

Lift the edges of the egg (the overhang) onto the toast slices, and top with ham slices and shredded cheese.

Allow to cook until the bottom toast is golden brown and cheese is melted (you can cover to melt the cheese if needed).

Flip one piece of Texas Toast onto the other to form a sandwich.

Notes

  • Meat: you can leave out the ham or swap it for cooked bacon, sausage, back bacon, or turkey.
  • Cheese: feel free whatever kind of cheese you enjoy!
